Quinoa Pilaf w/Spring Mix Salad

1 cup white Onions

1 cup Scallions

1 cup mushrooms

1/2 cup cherry tomatoes

1/4 cup fresh cilantro

1 tbsp sesame seed oil

1 tbsp Anatto powder

1/2 tbsp onion powder

1 tsp sea salt ( I'd recommend only a half teaspoon extra for additional flavor)

2 cups Quiona

2 cups of distilled water


Chop all whole ingredients up into small dices. Add sesame seed oil into skillet/pot and add whole diced veggies in along with seasonings. Turn on low heat and allow veggies to sauté for 3-5 mins. Add Quiona in and combine. Allow to sauté for an additional 2 mins. Pour in water and cover with a Lid for approximately 20 mins on low heat/medium low heat. Stir occasionally to avoid sticking. After it has cooked for 20 mins and water is basically gone. Turn eye off and allow it to cook itself for an additional 10-15 mins.


I pared this dish with a spring milk salad using, cucumbers, tomatoes, onions, red onions, avocado, and baby spring mix.


Cilantro dressing: cilantro , tahini, agave, mustard seed powder, pumpkin vinegar
